Rubicon Roasting is roasting a City Roast for this bean which enhances the toffee flavor of the bean. While still a medium roast, it is roasted to just beyond first crack, releasing those wonderful flavors.
The most diverse coffee producing country in Central America, famous for producing an array of top cupping profiles, the Guatemalan coffee offered by Rubicon Roasting comes from Huehuetenango, Atitltan, Quetzaltenango, San Marcos, or Santa Rosa. The current bean is from Huehuetenango from the COSECHA cooperative.

A mixture of small holder farms and larger estates make up the mainly washed production of Guatemala. Guatemala really does offer it all. Producers in Guatemala are passionate and careful with their crop, and while local infrastructure may not always favor them, this does little to deter the determination for producing ever better cupping coffees year after year.
